It must be able to defend its vast surfaces of mucosal membranes from exposure to pathogenic microorganisms. At the same time, it has to accept without reactivity the normal intestinal flora and foreign material in the form of food. The fact that the gut is such a major lymphoid organ (Scott et al., this publication) illustrates the importance of the defence of the intestinal mucosal surfaces.
